Peter Pagano, Head Chef/Owner

Pete grew up in Connecticut and moved to Louisville in 2012. As a first-generation Italian he spent Sundays enjoying family and food, especially Sunday dinners at Nonna’s house. After college, Pete pursued his passion for cooking and attended culinary school at Le Cordon Bleu in New Hampshire. After graduating, he worked at Blue Hill Stone Barns, a farm-to-table restaurant in Pocantico Hills, NY.  Pete then moved to San Francisco where he worked under Chef Chris Cosentino at Incanto Ristorante. Mercato Italiano is his first venture as head chef and owner.

Matt Bowling, Executive Chef

Matt Bowling is Mercato Italiano’s Executive Chef. A student from Sullivan University, he brings his passion for food and cooking to our kitchen. He has been with us since June 2017, having started as a grill and sauté cook. Matt believes in the idea that food can be straightforward and simple bringing together the quality ingredients and flavors found in traditional Italian food. He brings a modern edge to his cooking while working to produce the best experiences for our guests.

 

Ryan Sullivan, General Manager

As a Louisville native and Business Management graduate from Western Kentucky University, Ryan has been a part of the food service hospitality business for more than 20 years. He began as a dishwasher in his teens and over the years has been able to advance his skills through some of the top restauranteurs in the Louisville area including managing Stoney River Legendary Steaks, Mussel and Burger Bar, and Red Barn Kitchen. His education and vast experience has helped him to better understand his guests’ needs and make their dining experience as enjoyable as possible.
