Peter Pagano, Head Chef/Owner

Peter grew up in Connecticut and moved to Louisville in 2012. As a first-generation Italian he spent Sundays enjoying family and food, especially Sunday dinners at Nonna’s house. After college, Pete pursued his passion for cooking and attended culinary school at Le Cordon Bleu in New Hampshire. After graduating, he worked at Blue Hill Stone Barns, a farm-to-table restaurant in Pocantico Hills, NY.  Pete then moved to San Francisco where he worked under Chef Chris Cosentino at Incanto Ristorante. Mercato Italiano is his first venture as head chef and owner.
